There’s something refreshing about waking up on Saturday mornings knowing you’ll not be doing any thing in a rush. I particularly enjoy fresh baked pastry on weekends a routine that my family always looks forward to. This is one of my tried and tasted(of course) not original recipes you could try out(the coconut oil just adds this twist to its flavour) Yum!!
Ingredients
125 ml coconut oil melted
1 tsp vanilla extract
4 eggs beaten
3 very ripe bananas mashed
8 dates or raisins can do
1 tsp bicarbonate of soda
65g shredded coconut
135g flour – brown rice preferred
Method
Preheat the oven to 180 degrees and line it with a baking paper
In a medium sized bowl, mix the melted coconut oil with vanilla, eggs, bananas, dates and baking soda.
Add the shredded coconut and brown rice flour and fold in until well combined.
Pour this mixture into the lined loaf tin and bake for 45 mins to 1 hr or until a skewer is inserted and comes out clean.
Let it cool and serve.
